Red Clover Pancakes – Natural Remedies Mom

Parts of the herb you can use: Stems, leaves and flower – (the flower contains the most nutrition)

Here’s a basic pancake recipe:
1 1/2 cups white whole wheat flour
2 T. organic sugar
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 1/4 cups of raw milk (less if you like your pancakes thicker)
2 eggs
1 t. vanilla extract
2 T. olive oil

Mix dry ingredients. Make a well in the center and pour in milk. Add eggs, vanilla and oil. Whisk together, but don’t over-stir ~ keep the batter lumpy.

Here’s red clover growing in my yard. You want to be sure you don’t eat herbs that grow within 50 feet of the road – they contain too many toxins from passing vehicles.

 

Pick the heads off the flowers – just as many as you want to use. The flowers that are more purple are better!

 

Don’t pick the ones that have gone brown.

 

 

Wash them well.  I normally do 3 rinses to make sure all the bugs, and whatever else, is gone.

 

 

Pluck out the small purple petals. (You can eat the whole flower head, but I only use the little petals for this.  The green part is a little crunchy 🙂 )

 

 

Stir the red clover into the batter and fry in pan (I love using my iron skillets for pancakes!  It’s non-stick, but without the harm of the traditional “Teflon” non-stick coating. )

 

 

Serve with maple syrup, honey or jelly.

 

Other Uses for Red Clover

You can use red clover to steep into a tea, add to salads, or put in capsules. You can buy red clover dried if you like, but finding it in the wild is free! 🙂

Other good flowers to add to pancakes is dandelions, roses, violets, pansies. Really, any edible flower would be fun to experiment with. Begin today to find creative ways to add edible plants to your cooking.
