Ingredients

The main ingredient for these low-carb fluffy waffles is almond flour. To make the waffles fluffy and soft, we are going to also use eggs and baking powder.

The eggs hold the almond flour together while the baking powder helps them to rise and be fluffy and soft. This recipe can easily be doubled to make even more waffles.

Instructions

To make these almond flour waffles start by heating up your waffle maker. I used a mini waffle iron and was able to make 4 waffles out of the batter.

If you are using a large waffle iron you will likely be able to make 2 waffles.

Let’s get started with making almond flour waffles!

all ingredients in a large measuring cup

Add all the waffle ingredients to a bowl or a large two-cup measuring cup.

mixing batter with a fork

Mix the batter well with a fork so that the eggs are fully incorporated.

Brush/spray the hot waffle iron with coconut oil or olive oil cooking spray. Pour ¼ of the batter into the waffle iron and close the top.

Cook the waffles for 3-4 minutes until the waffles are golden brown or until the light turns off, indicating the waffles are done. Remove and repeat until all the waffles are cooked.

Hint: Craving crispy keto waffles? Just leave the waffle on the waffle iron to cook for longer.

Serving almond flour waffles

One of the best things about these waffles is how versatile they are.

Plus, you get a lot of bang for your buck—one serving is two mini waffles or one large waffle.

Serve the waffles hot and topped with butter, sugar free maple syrup (I recommend my homemade sugar-free maple syrup), whipped cream, and fresh berries.

I also like topping these with nut butter (almond butter in particular), and enjoying a glass of milk (or unsweetened almond milk) on the side.

Substitutions

Looking for a substitution for one or more ingredients? Here is a list of substitutions for keto fluffy almond flour waffles.

  • Almond flour: If you’re allergic to almonds or just can’t find almond flour, you can use sunflower seed flour or hazelnut flour as a substitute. Just keep in mind that these flours may have a slightly different taste and texture, but the recipe will still work. Or, simply give my coconut flour waffles a try.
  • Baking powder: If you don’t have baking powder, you can make your own by mixing together 1 teaspoon cream of tartar and ½ teaspoon baking soda.
  • Butter: If you don’t like the taste of butter or don’t have it on hand, you can use coconut oil instead.

Please note that these substitutions may affect the overall taste and texture of the final product.

Variations

Feel like having a make-your-own waffle night with a variety of flavors. Here are eight flavor variations for keto fluffy waffles that you can try:

  • Blueberries: Add ¼ cup of fresh or frozen blueberries to the batter for a burst of berry flavor.
  • Chocolate chips: Mix in a few spoonfuls of sugar-free chocolate chips to the batter for a delicious chocolatey treat.
  • Lemon: Add 1 teaspoon of lemon zest and 1 teaspoon of lemon juice to the batter for a zesty and refreshing waffle.
  • Cinnamon rolls: Add ½ teaspoon of cinnamon to the batter for a delicious cinnamon roll flavor.
  • Peanut butter: Mix in 1 tablespoon of natural peanut butter to the batter for a rich and creamy peanut butter taste.
  • Pumpkin Spice: Add 2 tablespoons of pumpkin puree and ½ teaspoon of pumpkin spice to the batter for a delicious fall-inspired waffle.
  • Savory: Add 2 tablespoons of grated cheese and 2 tablespoons of chopped herbs like parsley, chives, or thyme, and a pinch of black pepper for a savory waffle.
  • Coconut: Add a tablespoon of unsweetened shredded coconut to the batter for a delicious tropical twist.

Equipment

Here’s a list of equipment you’ll need to make keto fluffy waffles:

  • Waffle Iron: This is the most important piece of equipment for making waffles. You can find waffle irons in various sizes and shapes, but a standard round waffle iron will work just fine.
  • Mixing bowls or a cup: everything will get mixed together in one bowl.
  • Whisk or fork: To mix the ingredients together.
  • Measuring cups and spoons: To measure out the ingredients accurately.
  • Brush to brush on the coconut oil or an oil sprayer to spray with olive oil.

With these pieces of equipment, you’ll be able to make delicious keto-fluffy waffles in no time.

Storage

To store almond flour waffles, cool the waffles completely before storing them. If you store them while they’re still warm, they can become soggy.

Place the cooled waffles in an airtight container or a resealable plastic bag. This will help to keep them fresh and prevent them from drying out.

If you have leftover waffles, you can store them in the refrigerator for up to 3 days.

To reheat the waffles, you can pop them in the toaster or on a skillet over medium heat. This will help to crisp them up.

Top tip

I love mixing my waffle batter in a large two-cup measuring cup. This makes it so easy to pour the batter into the waffle iron slowly without overflowing the waffle iron.

Bonus… even fewer dishes to wash after, too!

FAQ

How many carbs are in almond flour waffles?

This keto fluffy almond flour waffles recipe has only 2.9g net carbs per serving. If using a mini waffle iron a serving is 2 waffles. If using a regular-sized waffle iron, a serving is 1 waffle.

Why are homemade waffles not crispy?

If your homemade waffles aren’t crispy I would recommend cooking them for a few minutes longer. The longer they cook the crispier they will get. Just keep an eye on them to ensure they don’t burn.
