Taste & Texture

These healthier no bake Samoa cookies offer a twist on the classic version, featuring a less intense sweetness. The dates contribute a subtle caramel flavor, and the cookies have a chewy, slightly sticky texture.

Since they are not baked, they don’t achieve the same level of chewiness as traditional baked cookies.

How to Make

Step 1

First, add a piece of parchment paper to a pan.

Step 2

Add the pitted dates and coconut flakes to a food processor or blender.

Step 3

Process for 30 seconds, until the mixture sticks together between your fingers.

Expert Tips for Success

Here are the tips for making the best no-bake Samoa cookies.

Buy pitted dates, and if your dates still have pits, be sure to remove them.

My preferred choice for this recipe is Medjool dates due to their natural softness and sweetness.

You have the flexibility to make these cookies in various sizes. They can be huge or small.

To form a hole in the middle of the cookies, use the end of a wooden spoon or spatula; however, this step is entirely optional.

Let the cookies chill until the chocolate hardens completely.
